Apple Butter Cookies

Soft and chewy cookies that put you in the mood for fall! These cookies use apple butter and warming seasonings and are a great treat.

Apple Butter Cookies

Wet Ingredients
 ½ cup Apple Butter
 ¼ cup Softened salted butter
 1 cup Sugar
 1 Egg
 ½ tsp Vanilla
Dry Ingredients
 1 ¾ cups Flour
 ½ tsp Cinnamon
 ½ tsp Apple Pie Spice
 ½ tsp Baking Soda
 ½ tsp Cream of Tartar
 ½ cup Sugar (RESERVE)
 1 tbsp Cinnamon (RESERVE)

In a large bowl, combine the softened butter, apple butter and sugar with a mixer on low speed. Once all items are combined, increase speed to medium and mix for 1 minute.

Add the egg and vanilla and combine.

In a separate bowl, combine all dry ingredients and whisk to combine.

Slowly mix about a 1/4- 1/2 cup at a time of the dry ingredients into the wet ingredients. until fully combined.

Scrape any batter off of the sides of the bowl. Cover the bowl with plastic wrap or foil and refrigerate for 2-3 hours. If after refrigeration the dough is still sticking to your hands, place back into refrigerator for another 15-20 minutes.

While dough is in the refrigerator, combine the reserved cinnamon and sugar into a shallow dish.

Once dough is ready, preheat the oven to 375 degrees.

Roll the dough into one inch balls. Roll the balls into the cinnamon/sugar mixture and place onto a non-stick cookie sheet. Bake for 13-15 minutes. Let cool for 2-3 minutes before removing from cookie sheet.
