Breakfast Nachos
Quick and easy week night dinner idea of Breakfast Nachos. A two-pan meal for busy week nights. Perfect for breakfast for dinner!

1 Breakfast sausage
1 cup chopped onion
1 tbsp Butter
6 Large eggs
3 tbsp Milk
Salt and Pepper to taste
1 Tortilla chips
8 oz Shredded Colby-Jack or Mexican cheese
Optional Toppings
1 Green pepper (optional)
Avocados (optional)
Tomatoes (optional)
Taco Sauce
Hot Sauce

Preheat oven to 350 degrees F. Cook sausage and onion in a large skillet until sausage is browned. Drain & remove from skillet.

Beat eggs with salt & pepper and milk. Melt butter in the skillet and add the eggs. Cook over medium heat, stirring occasionally until just set.

Arrange chips in a single layer on cookie sheet. Use a Sil-pat or lightly grease the pan. Layer chips with sausage mixture, cheese, eggs and more cheese.

Bake 5 minutes or until cheese has melted. Top with avocado, tomatoes or favorite nacho toppings.
