Our Disney Staycation-Day 3 Sleepy Hollow & Casey’s Corner

I hope you have been enjoying our “travels” to Walt Disney World as we stay in the safety of our quarantined home. The kids are fully on board with the fun and even made themselves Magic Bands today! (Magic Bands can be worn in WDW to access your resort room, pay for items and many more functions.)

In today’s edition we are focusing on food again! We will be eating our meals from Sleepy Hollow and Casey’s Corner in the Magic Kingdom. First up-lunch.

Sleepy Hollow is a quick service/snack restaurant in Liberty Square of the Magic Kingdom. We fell in love with the place on our first trip back in 2013 and make it a point to go every time! Their actual menu is a little more varied than my at home offerings. If you are interested in more information, one of my favorite sites to use for Disney menus is http://www.allears.net. I had the kids place a “mobile order” just like in WDW (when you order ahead and don’t have to wait in line once you arrive at the restaurant). The kids unsurprisingly all went with the waffle & Nutella option.

Instead of getting out the Mickey waffle/pancake maker again, I went with the much easier & faster store bought version. I usually get mine from Target or Meijer.

Spread some Nutella on the toasted waffles, cut up a banana and Disney World lunch is served!

Sweet & Spicy Chicken and Waffle Sandwich

Chaos Dad and I went for something a little more my speed- but again really easy! We used the leftover frozen chicken tenders from our Chicken Guy dinner. We happened to have regular frozen waffles on hand and I had purchased some coleslaw mix (just the cabbage and carrots, not actual coleslaw) as well.

I didn’t feel like making a flavored syrup on the stove like the one in this recipe, sweet & sticky chicken and waffle sliders, so Chaos Dad got creative. He used 3 parts maple syrup and 1 part pre-made buffalo sauce and it was perfect on our sandwiches!

Recipe for sweet & spicy chicken & waffle sandwich

  • Frozen Waffles (Belgian waffles would be great if you are so inclined)
  • Frozen chicken tenders (Homemade if you have more energy than I…)
  • Bagged coleslaw mix
  • 1/2 cup maple syrup
  • 2 TBS. buffalo sauce (I’m sure any hot sauce would do!)
  1. Bake chicken tenders per instructions on box (so fancy at The Chaos Manager)
  2. While chicken is cooking add syrup and hot sauce to a bowl and whisk to combine.
  3. Toast waffles
  4. Place chicken on waffle (If you can handle that)
  5. Add about 1/4 cup of coleslaw mix to the top of the sandwich
  6. Top sandwich with a substantial drizzle of syrup
  7. Make two because it is so good!

Casey’s Corner

Casey’s Corner restaurant is another quick service choice in the Magic Kingdom. Located on the corner of Main Street USA you can often find Jim playing the piano while enjoying the baseball decor.

Our dinner was once again served in these fantastic food boats to help with the ambiance of a quick service meal. Frozen corn dogs & some tater tots (tater tots aren’t actually served at the real Casey’s but we were having french fries the next day!), a few paper baseballs on the walls and I called it a night.

Not the healthiest meal, but I had a theme to uphold and everyone was happy which is really what I was going for on this one!
