Whis-Kid Slow-cooker Chicken Tacos

I have followed Erin Chase for quite a while and have even linked her spaghetti sauce recipe on this blog before. I am so excited to also now be an affiliate of her Grocery Budget Makeover program. She recently launched cooking lessons for kids in addition to her other programs and they are fantastic!

The cooking curriculum has everything you’ll need to get your kiddo started in the kitchen. When you purchase the program you will receive access to online tutorial videos and 20+ recipes.

I’ll take a volunteer from the audience…

The first recipe I chose was the slow-cooker ranch chicken tacos because…I already had all of the ingredients!

I really thought E would eat this up (so sorry for that, couldn’t resist the pun) since she’s been helping me out in the kitchen lately anyway. Of course she was feeling extra sassy on this day and had no interest.

There was no way I thought L would participate, as the kitchen tends to give him anxiety. As I was wondering where I would get a kid to demo the kid’s cooking curriculum, L stepped up! I was shocked and excited. He took on this challenge and loved every second of it. If he can do it, your kid can too!

Whis-Kid Cooking Lesson

Ingredients:

  • Chicken tenders
  • Dry ranch dressing seasoning packet
  • Taco seasoning packet
  • Chicken stock
  • Ranch dressing
  • Tortillas

I also had taco fixings and sauces on hand and used those instead of plain ranch dressing.

In the video, Erin tells kids how to safely cook the chicken by boiling it. She also lets you know how to make the recipe with a slow cooker or pressure cooker. We used out Instant Pot and it was quick and easy. (I took forever to jump on the Instant Pot train and it is so worth it, buy one now!)

Touching the raw chicken was the only thing L had a hard time with. He was really grossed out by the sliminess and salmonella factor. L used tongs to put it into the pot and we made sure to wash everything well afterward. Once he got past that, cooking was a breeze!

The next step was measuring the chicken stock. L took it very seriously. I was impressed he remembered to get on eye level with the measuring cup.

For the most part this is a dump recipe, so next into the pot went the seasoning packets.

Learning to use the stove with Whis-Kid

In the tutorial video, Erin and her son walk your child through warming tortillas on the stove top. L is extremely timid in using the stove, I was so proud of how he took the challenge on.

At this point, not only has L dealt with raw chicken, used the Instant Pot and the stove, he now volunteered to use a sharp knife to dice up tomatoes! The confidence the Whis-Kid curriculum instills is priceless.

Once the chicken was done (Erin gives you all of the cook times in her videos and recipes) we threw it in the stand mixer. This is the easiest way to shred your chicken!

After this last step, it was time to assemble L’s tacos! We made Spanish rice as a side dish, added some tomatoes, shredded cheese and ranch taco sauce and dug in.

Step by Step Recap:

  1. Place chicken, stock and seasonings into Instant Pot & cook.
  2. Warm tortillas on stove top.
  3. Remove cooked chicken from pot, use stand mixer to shred.
  4. Prep any other fixings or side items you would like, assemble tacos & enjoy!

It’s really that easy!

    Cooking with your kids is great! Mine aren’t quite ready for this level of helping, but I’m going to keep it in mind for when they’re suddenly ready!

    I have been spending a lot of time teaching my kids to cook lately. It is such an important skill for them to learn. It is nice that this book makes it easy and affordable for anyone to get into the kitchen with their kids.
