Breakfast Nachos

Over the course of my dinner planning I’ve noticed we have a Mexican dish at least once a week. Even my picky daughter seems to love anything to do with tortillas and cheese! Taking this idea, I decided to change things up and make some Mexican for breakfast in the form of…Breakfast Nachos.
It couldn’t have been easier (I made half of it with a baby strapped to me) and it was a huge hit with everyone…which as you know, doesn’t happen often.

Ingredients:
- Tortilla Chips
- Shredded cheese, colby-jack or Mexican are recommended
- 1 roll of breakfast sausage
- 1 small onion
- 2 TBSP. butter
- 3ish TBSP. milk
- 6 eggs (more or less depending on the size of the crowd you’re feeding)
- Salt & Pepper to taste
- 1 avocado (optional)
- Optional toppings: Cilantro, taco sauce, hot sauce, green peppers, tomatoes
Step 1) Brown sausage and Onion
I used Bob Evan’s Natural Sausage… the “natural” part makes me feel better about serving something with tortilla chips for dinner. After everything is cooked through, you drain the meat and remove it from the skillet…which means less pans to wash because step 2 is in the same pan!
Step 2) Eggs
Fewer dishes edition: Add butter to the hot pan and once melted, crack the eggs directly into the pan. Add milk, salt and pepper to taste and use a silicone whisk to make scrambled eggs.
Extra bowl to wash edition: Crack eggs into a separate bowl, add milk, salt & pepper to taste. Whisk until combined. Make sure the pan you made the sausage in is warm again. Add butter, once melted add egg mixture. Stir as needed until eggs are cooked through.
Step 3) Start building breakfast nachos
On a cookie sheet spread out your tortilla chips and start layering sausage, shredded cheese & eggs. One of the best gifts I’ve ever received is this Sil-pat:
Nothing gets stuck to the pan! Another win-win because food doesn’t get ruined and the pan is easier to clean as well. **Love it!**
Step 4) Bake
Pop the pan in the oven and bake for about 5 minutes at 350 degrees or until the cheese has melted. While you’re waiting you can chop up avocado or any other nacho toppings your family enjoys. We stuck with taco sauce, tomatoes and avocado.

What a great idea! I love Mexican food in general and make breakfast burritos sometimes but never thought about nachos. Love it!
