Breakfast Nachos

Over the course of my dinner planning I’ve noticed we have a Mexican dish at least once a week. Even my picky daughter seems to love anything to do with tortillas and cheese!  So when I found a recipe for breakfast nachos on https://emeals.com/ (no affiliation) I knew I had to give it a try.

It couldn’t have been easier (I made half of it with a baby strapped to me) and it was a huge hit with everyone…which as you know, doesn’t happen often.

Step 1) Brown sausage, onion & green peppers

As you can see there is no trace of peppers in that picture. I’ve come a long way but I’m still pretty picky! I used Bob Evan’s Natural Sausage…it makes me feel better about serving something with tortilla chips for dinner.  After everything is cooked through you drain the meat and remove it from the skillet…which means less pans to wash because step 2 is in the same pan!

Step 2) Add some butter & make the eggs!

Step 3) Start building nachos

On a cookie sheet spread out your tortilla chips and start layering sausage, shredded cheese & eggs.  One of the best gifts I’ve ever received is this Sil-pat (affiliate link):

Nothing gets stuck to the pan!  Another win-win because food doesn’t get ruined and the pan is easier to clean as well.  **Love it!**

Step 4) Bake

Pop the pan in the oven and bake for about 5 minutes at 350 degrees or until the cheese has melted.  While you’re waiting you can chop up avocado or any other nacho toppings your family enjoys.  We stuck with taco sauce, tomatoes and avocado because again…picky…

 1 Breakfast sausage
 1 cup chopped onion
 1 Green pepper (optional)
 1 tbsp Butter
 6 Large eggs
 1 Tortilla chips
 8 oz Shredded cheddar cheese
 Avocados (optional)
 Tomatoes (optional)

1. Preheat oven to 350 degrees F. Cook sausage, bell pepper and onion in a large skillet until sausage is browned. Drain & remove from skillet.
2. Beat eggs, melt butter in the skillet and add the eggs. Cook over medium heat, stirring occasionally until just set.
3. Arrange chips in a single layer on cookie sheet. Use a Sil-pat or lightly grease the pan. Layer chips with sausage mixture, cheese, eggs and more cheese.
4. Bake 5 minutes or until cheese has melted. Top with avocado, tomatoes or favorite nacho toppings.
5. Enjoy!
